Equipment Description

From Flatten-O-Matic to cooking, the thickness of the cutlet will not increase because the muscle fibers have been broken down and reconstructed. The Flatten-O-Matic will produce a more tender cutlet with a uniform thickness, increase plate coverage, and insure a faster cooking time.

Used Flatten-O-Matic 22942 Stainless Steel Flattener with: 

  • Thickness settings: 1/16 to 1 (inches) 
  • Conveyor width: 19.75 inches
  • Wire cut length: 5/8 inch
